Now I have seen one season of Mad Men and one season of Dexter.  Also open to some comedy for a change.

Breaking Bad is fantastic. An excellent drama. 
 
I haven't seen The Wire yet. It's in my TV queue.

@lead_farmer:  Have you already watched Simon's other show's? Homicide, The Corner and Treme all come highly recommended, but if your burnt out on super serious commentary I'd go for Dexter the black comedy might be a nice change.

Mad Men. Breaking Bad has a good first season but becomes pretty turgid in season two.

Dexter had one, maybe two good seasons. Everything else after has been cliche garbage, which is surprising considering the main character is a mass murderer. Seriously, though, I lost all sympathy for him after the first season. You just can't expect me to feel bad for a character that runs around killing people, no matter who they are.
 
Edit: My point is that you should watch Breaking Bad because it is currently the greatest show on television.

Breaking Bad is fucking incredible. The best show on Tv. Mad Men is really good too. The only thing that makes Dexter worth watching is, well, Dexter. Other than that, that show is pretty bland and uninteresting. BB starts out pretty slow, but stick with it.

I watched Treme just on the strength of The Wire and it was brilliant.  Bunk and Freeman are in it and they are still super cool.  I didn't think I would take to the music as jazz isn't normally my thing but you find yourself grooving along.  Can't wait for the 2nd series.

Breaking Bad is by far the best show on TV, even though it's nowhere near as sexy or popular as Mad Men is. Dexter is also an excellent show. 
 
Don't know if you're into mobsters. If so, Boardwalk Empire is a really good show about the prohibition era. Won a bunch of Golden Globes and other awards. 
 
If you're looking for comedy I suggest Curb your Enthusiasm, It's Always Sunny in Philadelphia, and Modern Family.

Breaking Bad is amazing and is fairly quick to get through the seasons, the next one premiers in July.
 
I'd say watch Deadwood if you want another HBO type drama. It's amazing, but only had three seasons so some of the threads are left unresolved.  
 
Mad Men is good and definitely worth a shot, but right now there is no return date for the next season so you have some time to catch up on that.

I could not not get into Mad Men or Dexter. You should consider trying Generation Kill as I think it was made by the same team as the Wire.
