It was just sort of announced who will be playing who.
Stannis will be played by Stephen Dillane, and Mel will be portrayed by Carice van Houten.
I thought Dillane did an awesome job as President Jefferson in the HBO miniseries, John Adams. I'm not familiar with any of van Houten's stuff. Neither of these actors look quite like how I pictured the characters to look from the books, but based on what HBO has done with the series so far, I'm sure they'll surprise me.
oops, didn't see you'd already posted this, my bad! I'm sure if they beard Dillane up and dye van Houten's hair bright red, they'll fit right in. I always thought of Mellisandre as a sultry kind of seductress, so this feels like a good match to me.
