As much as I wasn't real happy with the latest Superman, its opening credits were about as rousing as you could get. I felt like flying out of the theater (even though... yeah, not possible).
I like comedy ones. As a kid I was always stoked when there was a cartoon, like with City Slickers or Pink Panther. I was also always disappointed afterward when I saw it wasn't all a cartoon :)
I meant the Submarine Channel, not Blue Submarine (I assume the one I was accidentally thinking of was No.6). They actually feature Se7en t here. Gattaca too.
Music tracks play a big part in whether or not I like a sequence. The Good, the Bad, and the Ugly always gets me stoked, as does the opening to The Warriors. Lost Highway manages to pull the perfect sinister edge, thanks to the Bowie track. North by Northwest, too, owes a lot to its score, and I tend to like Hitchcock openers. And eXistenZ's score is properly filled with anxiety and unease, while another Cronenberg pic, A History of Violence, has that undertone of menace. It may not be everyone's cup of tea, but Jesus Christ Superstar manages to intrigue me and unnerve me at the same time.
If we're talking TV, how about Carnivale? Or Six Feet Under, which had a sort of hopeful, if dark, tone that fit the series (at least the parts that I saw). Firefly and Farscape are both fun, but Farscape especially has that deeply alien feel for me that gets me in the mood for what's coming next. Other science fiction shows that come to mind are Buck Rogers and Voyagers. Of all the Star Trek shows, strangely enough I think it was Voyager that had my favorite opening title sequence.
As much as Miami Vice was goofy, I treated the opening credits as my teetotaler's nightcap before going to bed, and on the opposite end of the crime spectrum, Homicide: Life on the Street suggests to me that feeling of endlessness when working in the emergency services, that problems are going to keep coming whether or not you're ready for them. And how about the very sixties The Prisoner? :)
One of my favorites in any medium, by far, though, is Cowboy Bebop.
Zombieland's was priceless. 2001 still has the whole Awe of Creation thing going on for me. Have to watch that one of these days. :)
For the life of me I can't remember what Fight Club's was, though.

I'm a huge fan of the Catch Me if you can opening titles.
